January has been such a crazy busy month for me and the Craft Box Girls team. Oh, did I forget to mention that I am now CBG’s new Director of Content? We wrapped up our first children’s craft book on February 1st.  The book is scheduled to release Spring 2016. Look for it! We are so excited about it!

Now that I have my freedom back (for a short time), I’m going to make the first dessert on my mind. This is cheesecake! I’ve made a variety of cheesecakes in the past but this one is different. I thought giving these cheesecakes a different body would make things extra fun. Check out my cheesecake eggrolls.

Cheesecake Eggrolls

If you have a deep fryer and love cheesecakes then this recipe will be fun to make and great for your next party. Your guests will go crazy over this bite-size and finger-food delight. It’s easy to mix the cheesecake, roll it up, freeze it and deep fry it when you are ready to entertain. Add a canned cherry glaze for dipping and the crowed will go wild.

Cheesecake Eggrolls

1 can of country-style cherry with glaze

1 package of eggroll shells

8 oz. pack of cream cheese

½ cup of sugar

1 teaspoon of vanilla extract

2 eggs

3 tablespoons All- Purpose flour

Vegetable oil for frying

Instructions:

In a mixer, combine cream cheese, sugar, vanilla, flour and one egg. Mix on low until blended. Break the second egg and only use the yolk to seal the eggroll shell. Turn the eggroll shell like a diamond. Scoop 1 tablespoon of cream cheese mix onto the center of the eggroll shell. Fold the bottom up. Then fold the sides in the center.  Ensure the folds are tight to keep the soft cream cheese mixture inside when frying. Then roll the rest of the eggroll from the bottom up sealing the ends with egg yolk like an envelop. When you are done rolling the eggrolls, put them in the freezer overnight to harden the cream cheese and eggroll shells. When you are ready to cook, heat the deep fryer to 350 degrees F. Fry the frozen eggrolls for 5 minutes or until it’s golden and crispy. Drain the eggrolls on a paper towel.

Serve the cheesecake eggrolls with canned cherry glaze or any glaze you want. Sprinkle with powdered sugar if you don’t want any dipping glaze. Enjoy because these are so good!
