It was one of those days when I was hungry and wanted a goodie-foodie snack. I had Chinese sausages a.k.a lap xuong and pizza dough already in the fridge. It was the perfect snack my taste buds craved. Pigs in a blanket using fresh pizza dough and Chinese sausages was a great idea!
This is not one of those pretty party snack so no dressing up is required. My pigs in a blankets are simple, straight up sweet sausages wrapped in dough, brushed with an egg yolk wash and baked to eat ASAP.
Pigs in a Blanket
4 Chinese sausages, cut 2 inches long
fresh pizza dough
2 tablespoons All-Purpose flour
Boil the Chinese sausages for 20 minutes. I like to make sure it’s fully cooked.
Pinch a small piece of pizza dough and add a little flour for easy handling. Spread the dough out with your fingers. Wrap the dough around a piece of sausage. Put each rolled pigs in a blanket in a lightly greased baking pan. Do this for all of the sausages and dough. If you have leftover dough, pinch a little and tuck it between the pigs in a blankets to fill up the pan. Brush with egg yolk.
Bake at 400 degrees for 20 -25 minutes or until golden brown. Eat the pigs in a blankets while it’s fresh hot.
The sausages are slightly sweet so I like it without any dips. If you are a dipper, I suggest Sriracha mayo, mustard, ketchup or hot sauce. Make it your own.
