Vietnamese-Style Shrimp and Grits

Vietnamese Meets Southern American

I love Vietnamese food. Most people recognize pho as the top Vietnamese food favorite. I love pho too. I also love the Vietnamese family-style dishes like caramelized shrimp. It is a comfort food that reminds me of everyday family dinners. Caramelized shrimp pairs well with white rice. When paired with grits, it becomes a powerhouse of Southern-American texture fused with exotic Asian flavors. I think this Vietnamese-style shrimp and grits is a wonderful and tasty combination.

The southern gal in me loves grits. Grits serves the same purpose as white rice to me. That means I like my grits with something savory like a caramelized shrimp cooked in salty Vietnamese fish sauce. The sweet and salty combination hits the spot when it is paired with grits. There is a nice balance to it all.

I’ve had shrimp and grits in many forms.  I have never seen this version of shrimp and grits on a restaurant menu before. I’m sure it’s out there in some restaurant somewhere. But for now, I all can say is the recipe is below. It’s definitely a must-try if you already love the lively flavors of Vietnamese cuisine. I honestly think Vietnamese-style shrimp and grits is one of the best fusion combinations out there.

Vietnamese Shrimp and Grits

Vietnamese-Style Shrimp and Grits

  • 1/3 cup grits
  • 1 and 1/3 cup boiling water
  • 1 tablespoon butter
  • salt
  • 1/2 pound shrimp, peeled and devein
  • 1 tablespoon minced garlic
  • 2 tablespoons cooking oil
  • 1 and 1/2 tablespoons sugar
  • 1 tablespoon fish sauce
  • black pepper
  • shredded green onions
  • 1/4 cup water


  1. In a sauce pan, bring water to a boil.
  2. Add grits and a pinch of salt. Let it bring to a boil while stirring continuously. Cook for 5 - 7 minutes until the grits solidifies.
  3. Add butter and set aside.
  4. Heat the pan on medium high.
  5. Add oil and garlic. Stir it around until the garlic is fragrant.
  6. Add shrimp, fish sauce, sugar, black pepper and water. Let it cook down to caramelized.
  7. Stir the shrimp around to cook evenly.
  8. Serve the caramelized shrimp over buttered grits.
  9. Garnish with shredded green onions.
